Since having Lily, my cooking skills have started to become existent. They’re not fantastic, but they’re getting better. She now eats what everyone else can eat and I found cooking two separate meals tough.
I was cooking one meal Lily and then another one later on for me and my boyfriend. It’s silly! I decided enough was enough and went looking for a couple of simple, easy to cook meals which we could all enjoy, but that would also keep for a couple of days so we didn’t have to cook as often!
Shepherds pie has to be one of the easiest things i’ve found. It involves cooking a few different things at the same time which took a while to get the hang of, but once I picked it up it was easy. All you need is some mince, a couple of different vegetables and some potatoes. All you need to do is cook the mince and boil the vegetables (I usually use peas, carrots and broccoli). Once this is done, mix them together and pour into a dish. You also need to boil some peeled potatoes and mash them up. Then finish it off by spreading the mash on top. You can also add some grated cheese on top if you want.
Leave it in the oven for about half an hour at 180 degrees and then serve it up!
Pasta bake is a bit more trouble as you need to make a sauce and for those who’s cooking is just as unique as mine, this can prove a bit hard. Just cook the pasta as normal and leave it to drain off. Then, cut some bacon into small pieces and cook.
To make the sauce, melt some butter into a saucepan. Once it’s melted, and about a pint of milk. Let this heat up for about 2 minutes then add a few cubes of cheese. Give them about 5 minuets to melt. Then, slowly add flour, a little bit at a time and stir continuously until the sauce starts to thicken up. You only need to do all this on a low heat.
Once it’s thick, mix everything together in a dish, sprinkle some cheese on top and put it in the oven at the same temperature and time as the pie.
Both these meals can be made in smaller portions to keep in the freezer. I use the foil containers you get with a takeaway meal to make smaller amounts to put in the freezer so that I always have something available just in case.
The whole family can eat these meals and you can freshen them up and change them by adding some extras that you like. I’m not a confident cook so don’t really add my own stuff, i’m just quite proud of myself when the meal is edible!
